The classic Miss Chef® strudel

Ingrédients

Pastry

  • 250 g flour
  • 80 g butter
  • 2 eggs
  • 1 pinch of salt
  • 125 g tepid water
  • 1 egg yolk for glazing

Garniture

  • 4 Miss Chef® apples
  • 50 g raisins
  • 50 g pinenuts
  • 150 g caster sugar
  • 10 g powdered
  • cinnamon
  • icing sugar

Préparation

  1. In a large and lightly floured mixing bowl, lightly mix the flour, butter, eggs, salt and tepid water until you get an even paste.
  2. Cover and leave to rest for 30 minutes in the refrigerator
  3. Wash, peel and core the apples. Cut them into quarters. Soak the raisins in boiling water for 10 minutes.
  4. Roll out the pastry into a rectangle 30 cm x 40 cm or 30 cm x 50 cm onto a floured tea towel. Place the apples, raisins and pine nuts on top. Sprinkle with sugar and cinnamon.
  5. Use the tea towel to roll the pastry making sure all the filling remains tightly packed inside. Place on a baking sheet. Tuck the sides underneath.
  6. In a small bowl, whisk the yolk with a teaspoon of water and glaze the strudel with a brush.
  7. Place in the oven on the middle shelf and cook for 45 minutes at 180°C. Remove from the oven, place on a cooling rack. When cool, sprinkle with icing sugar.

Trucs et astuces

Use a mesh tea ball (or sieve) for an even coating of icing sugar.
